Quick Corn Soup

A nice corn soup recipe. cream of corn

Ingredients

  • 2 cups frozen corn
  • 3 teaspoons butter
  • 1 garlic clove
  • 1 small onion, minced
  • 3 small tomatoes, peeled and diced
  • 4 cups vegetable stock
  • 1/2 teaspoon oregano
  • salt & pepper to taste
  • 1 cup heavy cream

Directions

1. Thaw corn and drain excess water. Process 1 cup to puree in food processor.

2. In a large pot, heat butter and add onion and garlic. Gently stir until onion is translucent. Add tomatoes and crush them while stirring.

3. Add stock, oregano, both cups corn and cook for 20 minutes. Season to taste.

4. Add cream, cook for 10 more minutes.
