Minestrone II

I always loved this soup when I was young, now I make it for my friends and family.

Ingredients

  • 1/3 cup virgin olive oil
  • 3 medium onions, chopped
  • 4 medium carrots, shredded
  • 4 celery stalks, chopped
  • 28 ounces tomatoes, peeled and cubed
  • 7 ounces crushed tomatoes
  • 6 cups water
  • 1 vegetable bouillon
  • 5 fresh basil leaves
  • 1 teaspoon dried thyme
  • 14 ounce can beans
  • 1 cup of pasta (any kind you like)
  • 3 cloves garlic, crushed

Directions

1. In a large pot on medium heat pour oil, add onions, carrots and celery. Stir for 3-4 minutes.

2. Add tomatoes, water and bouillon. Season to taste, add basil and thyme.

3. Bring to a boil and simmer for 30 minutes. Add beans, garlic and pasta, cook for 10 minutes or until pasta is al dente.
