Pea Soup II

You can add sausage to this pea soup for an even better taste.pea soup

Ingredients

  • 1 medium onion, finely chopped
  • 4 cloves garlic, sliced
  • 3 tablespoons olive oil
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup dried green peas
  • 6 cups boiling water
  • salt & pepper to taste

Directions

1. In a soup pot, heat oil and add onions and garlic. Stir and add carrots and celery. Continue stirring for 5 minutes.

2. Pour boiling water into the pot, and add peas. Bring to a boil and simmer for 30 minutes, until peas are completly softened. Season to taste.

3. Crush the peas with a hand blender, leaving the consistency coarse.
