Creamed Spinach Soup

A bright green soup to fill your stomach and warm your heart. spinach cream soup

Ingredients

  • 1 medium onion, chopped
  • 5 teaspoons butter
  • 1 pound fresh spinach
  • 2 cups vegetable stock
  • 1 cup milk
  • 1 cup heavy cream
  • 1/8 teaspoon nutmeg
  • salt & pepper to taste

Directions

1. Wash spinach well.

2. Saute onion in butter on medium heat until tender, not golden. Add spinach and stock.

3. Bring to a boil and simmer for 20 minutes. Add milk, nutmeg and season to taste. Simmer for 10 more minutes.

4. Puree soup and serve.
