Onion Jam

I love making onion jam. It's a great condiment for meats and breads.
Ingredients
- 2 large red onions, chopped
- balsamic vinegar
- vegetable oil
- brown sugar
Directions
1. Heat the oil and fry the onions on high until lucid. Turn heat down to low and stir every few minutes, for 15 minutes.
2. When onions have softened, add enough brown sugar to caramelize the onions. Stir.
3. Add balsamic vinegar to taste. Some like more, some less. If you put in too much, you can always add more sugar.
4. Let simmer on low heat, stirring occasionaly, until all juices have evaporated.
