Green Chili Rice

Green chili and cheese upgrade this from regular rice - to Super Rice!
Ingredients
- 1 large onion, chopped
- 2 tablespoons butter or margarine
- 4 cups hot cooked long-grain rice
- 2 cups sour cream
- 1 cup small curd cottage cheese
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 (4 ounce) cans chopped green chilies, drained
- 2 cups shredded Cheddar cheese
Directions
1. In a large skillet, cook onion in butter until tender. Remove from the heat.
2. Stir in the rice, sour cream, cottage cheese, salt and pepper.
3. Spoon half of the mixture into a greased 11x7" baking dish. Top with half of the chilis and cheese. Repeat layers.
4. Bake, uncovered, at 375F for 20-25 minutes.
