Passover Mandel Bread

Passover Mandel bread, by Elaine Hersh.

Ingredients

  • 1 cup oil
  • 4 eggs
  • 1/2 cup potato starch
  • 2/3 cup sugar
  • 1 cup cake meal
  • 1 cup chocolate chips
  • 1/2 tspn salt
  • 2 tbsp orange juice

Directions

1. Cream together oil and sugar.  Beat in eggs.

2. Mix dry ingredients together. Gradually add orange juice,  then stir in chocolate chips

3. Rest Cocoa bowl with wet towel for 1/2 hour.

4. Preheat oven to 350F.

5. Wet hands and prepare 4 loaves on well greased cookie sheet. Sprinkle with sugar and cinnamin.

6. Bake 25-30 minutes.

7. Slice loaves,  Sprinkle with sugar and cinnamin. Bake 5 additional minutes.

8. Cool on wire rack.
