Apple Nut Chocolate Cake

A Passover kosher recipe for a cake made of apples, nuts and chocolate.cake

Ingredients

  • 7 oz bittersweet chocolate
  • 1 cup heavy cream
  • 7 oz butter, cubed
  • 6 eggs, seperated
  • 1 cup sugar
  • 1 apple, shredded
  • 1/2 cup nuts, chopped
  • 4 tbspns brandy
  • 4 tbspns matzoh meal

Directions

1. Heat cream with chocolate over low heat and stir until chocolate has melted. Remove from heat, adding butter and stirring until all butter has melted. Add egg yolks slowly, stiring constantly.

2. Whip egg whites, slowly adding sugar until firm. Fold with chocolate. Remove about 1/3 of the portion, set aside in the refrigerator.

3. Mix with remaining two-thirds apple and half the ammount of nuts. Add brandy and matzoh meal. Pour into a 9" baking dish.

4. Preheat the oven to 350F and bake for 40 minutes.

5. Spread 1/3 of the set aside cream on the cake, and sprinkle nuts on top. Refrigerate overnight.
