Kosher Sushi Rolls

 Is it possible to make a kosher sushi roll? Yes! Though sushi in itself is not always kosher, there are ways of preparing it kosher. As long as you use kosher fish and kosher seaweed (called "Nari"), you can enjoy a kosher sushi roll! Before you begin, there are a few things you should know:

Sushi Rice

Japanese rice is white, short and for preparing sushi, mixed with a dressing made of rice vinegar, sugar and salt. The dressing is matter of personal taste, but roughly for 1 cup of rice use:
  • 1/9 cup rice vinegar
  • 1 Tbspn Sugar
  • 1/3 Tspn Salt
Cook the rice according to the direction (usually 1 cup water per 1 cup rice) then spread the cooked rice on a large plate or bowl. Make sure it's non-metallic, or the vinegar might tarnish it. Mix the ingredients for the dressing until they dissolve. You can heat the vinegar a bit to fasten the process, but make sure it's cooled down before mixing with the rice. Sprinkle the dressing over the rice, and mix carefully so as not to smash it. Now let the rice cool to room temperature.

Seaweed (Nori)

The seaweed wrappers used for sushi are called "Nori". Nori may not always be kosher, as it can contain insects trapped in the leaves. There are kosher alternatives, such as "Emerald Cove" brand or "Sushi Maven".

Types of Sushi

There are different types of sushi, and it can be easy to confuse the names. They are:
Nigiri - these consist of oblong mounds of rice, with a topping draped over. Typically, the topping will be a slice of raw fish.
Maki - this is your typical sushi roll, seaweed on the outside, rice and fillings on the inside.
Futomaki - This is maki-type roll, and they are usually of a larger diameter.
Hosomaki - This maki-type roll is characterized by a smaller diameter, typically 3/4".
Temaki - a cone shaped piece of nori, filled with rice, and fillings spilling out from the top.
Uramaki - these are also called "inside-out" rolls. The nori is on the inside, and the rice is on the out.
