Lemon Muffins

I love the taste of lemon. I love the smell. If it were up to me, there would probably be lemon in everything. Think about it - how many flavors do you know that can be made into either ice cream, or marinate chicken?
These lemon muffins are a real sweet treat, and surprisingly easy to make.
Ingredients
- 2 large eggs, seperated
- 1/2 cup butter (at room temeprature)
- 1/2 cup sugar
- 1 cup flour
- 1 tspn baking powder
- 1/4 tspn salt
- 4 tbspns lemon juice
- 1 tbspn lemon rind
Directions
1. Preheat oven to 350F.
2. Beat egg yolks for 2 minutes
3. Cream together sugar and butter
4. Fold egg yolks into butter mix.
5. In a large bowl, mix dry ingredients.
6. Add lemon juice and rind to wet mixture, and mix into dry mixture.
7. Beat egg whites until stiff
8. Fold egg whites into batter.
9. Fill muffin cup 1/2 full with batter
10. Bake for 15 minutes, until golden brown or toothpick comes out clear.
Serves: 12 muffins
