Candy Crunch Fudge Layer Cake

Vivian from NJ, USA shares with us their recipe for candy crunch fudge layer cake with ganache frosting.

Ingredients

  • 2 cups flour
  • ¾ cup cocoa powder
  • 2 eggs
  • 1 cup sour cream
  • 2 cups sugar
  • 1/2 cup vegetable oil
  • 1 ½ teaspoons baking powder
  • 1 cup hot coffee
  • 1 ½ teaspoons baking soda
  • 1 teaspoon chocolate
  • 1 teaspoon salt
  • One container dipping chocolate (can be found in baking isle)

Directions

1. Preheat oven to 350 degrees F. Lightly grease two 9” round cake pans and set aside.

2. In a a large mixing bowl, mix together flour, cocoa, and sugar, baking soda, baking powder, and salt. Add eggs, sour cream oil, hot coffee, and chocolate extract.

3. Spoon cake batter into the prepared pans. Bake for 35-40 minutes or until a toothpick comes out clean when inserted into the middle of the cake.

4. Cool 10 minutes. Run a knife around the insides of pans to loosen cake, and then turn pans over on a cooling rack to remove cake. Cool completely.

5. Spread thin layer of tempered chocolate on bottom layer.

6. Spread fudge topping on top of one of the cake layers. Place the other layer on top of the first layer so that the fudge is in the middle.

7. Spread tempered chocolate on top layer. Then frost with ganache frosting.

 

Ganache Frosting Recipe

Ingredients

  • 1 can sweetened condensed milk
  • 1 cup chocolate chips
  • 1 ½ tsp chocolate extract

Directions

1. Pour can of sweetened condensed milk in sauce pan with the chocolate chips and chocolate extract.

2. Heat on low flame until chocolate is melted and has a smooth consistency. Stirring constantly

3. Let stand until room temperature.

4. When at room temperature whip with electric mixer until the mixture is fluffy. The color of the mixture will lighten.

5. Frost top and sides of cake
