Simple Cheese Cake

Cheesecake  A cake you can make on Shavuot.

Ingredients

  • 1 lb.curd cheese or cream cheese
  • 2 eggs
  • 1/2 lb. sugar
  • 15 petit buerre cookies
  •  1/4 lb. unsalted butter, melted
  •  Flavoring:
    •  2 ounces grated plain chocolate
    • 2 teaspoons cinnamon
  • Topping:
    • 2/12 cups sour cream
    • 2 tablespoons caster sugar
  • Garnish suggestions:  Plain chocolate shavings, cinnamon , strawberries, any other fruit

Directions

  1. Pre-heat your oven to 350ºF.  Line and grease a 9 inch pyrex pie dish or loose bottom cake tin .
  2. Crush biscuits and pour in the melted butter. Press the biscuits in an even layer around dish.  Set aside.
  3. Beat the cheese, sugar and eggs together and pour into dish. Bake for 30 minutes in the preheated oven.
  4. Remove from the oven gently.
  5. Mix together sour cream and sugar. Pour over the cake and return to the oven for 5 more minutes.
  6. Turn the oven off. Leave the cake inside the oven til the cake has completely cooled down. This prevents the cake from cracking.
