Hash Brown Quiche

We'll use hashbrowns form the base to this tasty quiche.
Ingredients
- 3 cups frozen hash browns (thawed)
- 2 Tbsp. butter (melted)
- 1/2 cup 1% cottage cheese
- 3/4 cup Mozzarella cheese
- 10 oz spinach (fresh or frozen, chopped)
- 4 eggs (beaten)
- 1/4 cup milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions
1. Combine hash browns and butter in a greased 9-in. pie plate. Press onto the bottom and up the sides, forming a shell.
2. Bake at 425 degrees for 25 minutes. MIx remaining ingredients in a bowl, and pour over hash brown crust and return to oven at 325 degrees for 40 minutes, or until knife into center comes out clean.
