Runner's Omelette

Great omelette after a run.

Ingredients

  • I egg
  • 2 egg whites
  • zucchini grated( about 30gms)
  • carrot grated (about the same amount as zucchini)
  • Feta Cheese lo fat, 30gms chopped

Directions


Mix all ingredients in a bowl. Pour onto hot non stick fry pan and allow to cook through . About 5-7 mins. Flip onto other side to brown the top, for a minute or two, then serve!
