Runner's Omelette

Great omelette after a run.
Ingredients
- I egg
- 2 egg whites
- zucchini grated( about 30gms)
- carrot grated (about the same amount as zucchini)
- Feta Cheese lo fat, 30gms chopped
Directions
Mix all ingredients in a bowl. Pour onto hot non stick fry pan and allow to cook through . About 5-7 mins. Flip onto other side to brown the top, for a minute or two, then serve!
