Cottage Cheese Pancakes

About 20 minutes to make this delicious breakfast.

Ingredients

  • 2 cups 1% milk fat cottage cheese
  • 4 eggs lightly beaten (just stir with a fork)
  • 1 tsp salt
  • 1/2 cup all-purpose flour

Directions

1. Stir together all ingredients. Let sit for at least one hour but overnight is fine. Cook on a non-stick griddle preheated & lightly sprayed with cooking spray.

2. Turn after the edges begin to turn brown & surface is slightly dry looking; about 5 min at med temp.

3. Serve hot with artificial sweetener OR sugar reduced fruit spread. Makes 8 4in. pancakes. Each serving is 2 pancakes.
