My sunday omlettes

that's my favorite vegeterian - dairy omlette .

Ingredients

Makes one omlet

  • 2 eggs (whole)
  • 2 eggs (whites)
  • 4 Tbls water
  • 1/4 cup cheddar cheese (grated)
  • 1/4 cup peppers
  • 2 Tbls onion
  • 1/2 roma tomato
  • 1/2 avocado
  • 1 tsp butter

 

Directions

1. chop onion and peppers and saute with pam spray until tender. Remove to plate.

2. Whisk eggs, whites and water together. Add dash of salt.

3. Get 8" skillet very hot and then melt butter. Add egg and water mixture. Cook through. Then add cooked veggies and cheese as well as tomato. Fold in half when cheese is melted. Top with avocado slices.
