Moussaka

After being asked by one of our readers, we added this great Mediterranean dish. Angelica, this recipe is for you!
Ingredients
Sauce
- 1 Large Onion
- 5 Fresh Garlic Cloves
- 1/2 lb. Crushed Tomatoes
- 2 Medium sized fresh Tomatoes
- Dash of chopped fresh parsley
Moussaka
- 4 Eggplants
- 1 lb. Ground Beef
- 5 Garlic Cloves
- 3 Tspns. Bread Crumbs
- 1/2 Cube Chicken Bouillon
- 1/4 Cup Rice
Directions
1. Prepare the sauce by frying onion and garlic in a pan. Add tomatoes, and cook until they are very tender. Season to taste with salt, pepper, paprika and cumin. Reduce heat to a simmer.
2. Wash eggplants and slice thinly.
3. In a mixing bowl, mix all Moussaka ingredients. Mix well, then place a generous ammount of filling in between two slices of eggplant.
4. Place the eggplant "sandwiches" in the simmering sauce, covering each "sandwich" in sauce.
5. Cover and let simmer on low heat for 90-120 minutes.
